6-8 squash - split lengthwise
1 lb. ground pork
1 c bread crumbs
1/2 onion - chopped
1 c parmesan cheese - reserve for topping
1 tsp chopped garlic
1 tsp chopped parsley
1 tsp salt 2-3 tbsp oil
Scoop pulp from squash into mixing bowl. Add ground pork, bread crumbs, onion, half the parmesan cheese, garlic, parsley, salt and pepper to bowl. Mix well.
Rub the squash halves with oil, place on baking sheet and sprinkle lightly with salt.
Roll sausage mixture into balls and stuff into squash halves. Top with parmesan and bake in a 350 oven for 30-40 minutes. Squash should be fork-tender when done.
