Conference Center Crab Cakes

2 lb lump crab meat
2 c bread crumbs - reserve 1/2 c
1/4 c lemon juice
1 egg
1 tbsp olive oil
1/2 c mayonnaise
1/2 c red bell pepper - chopped
1/2 c yellow bell pepper - chopped
1/4 c chopped parsley
1/4 tsp salt
1/4 tsp pepper
1/8 tsp terragon
1 tbsp dry mustard
1 tsp ceyenne pepper

beat the egg in a small bowl - add the lemon juice and olive oil
In a large bowl place 1 1/2 c bread crumbs
Add the lemon egg mixture and remaining ingredients - mayonnaise; red bell pepper; yellow bell pepper; parsley and spices; mix well
Add crab meat and mix well
Hand-form patties each about 1/2 inch thick - four inches across
Coat the patties with remaining bread crumbs

Heat 1/4 c oil in skillet and add patties.
Cook until golden on both sides
